The sweet side
Croissant dough cannot be rushed
You mix it, fold it around the butter and let it rest in the cold, several times over: it is the part almost nobody attempts at home, and it is exactly what you learn here, by hand, on the marble.
Then come the ring doughnuts and the bombe, fried and filled on the spot — custard, chocolate or jam. You leave with a full tray.

The same long table and the same hall lend themselves beautifully to a party. We host birthdays, birthday dinners and company events, with the cooking class as the centrepiece or simply as an excuse to gather everyone around one table.
Menu, timing and number of guests are worked out with Fabiana, depending on what you're celebrating.

Why it isn't the usual cooking class
You really cook, with your hands
No demonstrations to watch: everyone has their own board, flour and egg. You knead, roll the dough, get it wrong and try again.
In a home, not a classroom
Casale Fedele is a family home. We cook in the house kitchen or under the pergola in the garden, depending on the season.
It ends at the table, together
The lesson doesn't stop at the stove: we lay the table, pour the wine and eat what you made, slowly, all together.
Family recipes, not textbook ones
Acqua cotta, tozzetti from Viterbo, pasta alla chitarra: dishes of this countryside handed down by word of mouth, with the real quantities of the people who have always made them.

Not only in summer
When it's cold, we move inside
The pergola is the loveliest place to eat together, but the Casale lives all year round: in autumn and winter the table moves into the indoor hall, with its beamed ceiling and big windows onto the garden. Same long table, same conviviality, with candles lit and the warmth of indoors.
The class stays the same: you knead, you cook, and at the end everyone sits down together. Only the view from the window changes.

Kneading together does what no meeting room can: it puts everyone on the same level, hands dirty, no hierarchy. The Casale is yours for a whole day, from the cooking class into the evening.

Corporate team building
Kneading together does in three hours what a classroom course misses in two days: it puts everyone on the same level. The director and the person who joined last month have the same floury hands, the same dough that will not come together, the same dish to carry to the table at two o'clock.
We build the day with you: mixed teams drawn at random, a precise brief and a clock, and half an hour at the end sitting down to look at how you worked — the part that turns a lunch into training.

Hen and stag parties
The Casale becomes yours for the weekend: arrive with your bags, put on an apron straight away for the fresh pasta class, then relax in the garden, dine all together and enjoy an evening you'll remember for a long time. We organise the programme; you just have fun.

Open-air cinema
In the garden we keep a screen and projector ready for a film night under the stars, after dinner. The same space works just as well for a film club with discussion, or for a more structured working afternoon: corporate team building and training courses with screenings, far from the usual meeting room.

Frequently asked questions
Before you book
Do I need to know how to cook?
Not at all. Most of our guests have never made pasta in their lives. We guide you step by step and adapt the pace to the group.
Is the experience suitable for children?
Yes, and it's one of the things we enjoy most. Kneading is fun at any age: we set up lower stations and give the little ones tasks they can manage safely.
Do you cater for intolerances or special diets?
Yes. We handle gluten-free, vegetarian and vegan, and most intolerances. Tell us when you book so we can arrange separate ingredients and stations.
What if it rains?
Nothing serious: we cook in the Casale's indoor kitchen instead of under the pergola. The experience goes ahead in any weather.
How many people are in a class?
We keep groups small on purpose: a maximum of 8 for pasta classes, 12 for tastings. For larger groups we arrange dedicated dates.
How do I book?

Can I combine the class with a visit nearby?
That's exactly how we suggest doing it, and the reason many people choose us. The class takes half a day: in the other half you can reach the Roman amphitheatre of Sutri or Palazzo Farnese in Caprarola in fifteen minutes, Viterbo and its hot springs in twenty-five, the Park of the Monsters at Bomarzo or the gardens of Villa Lante in twenty-five. Tell us how many days you have and we'll prepare the itinerary.
What is really worth seeing around here?
More than you'd expect. Tarquinia and Cerveteri are UNESCO World Heritage: two Etruscan necropolises, one with hundreds of frescoed tombs. Caprarola has Palazzo Farnese with its spiral royal staircase, Bagnaia the gardens of Villa Lante, Bomarzo the Sacred Wood with its stone giants. Then medieval Viterbo, the Romanesque basilicas of Tuscania and Civita di Bagnoregio on its crag. Almost all within an hour.
Can we visit the local farms?
Yes, and we recommend it to anyone curious: seeing the vegetable garden and the farms nearby explains the ingredients better than any lesson. We arrange the visit according to the season and who's available to welcome you, so ask when you book.
