Tozzetti from Viterbo

Method

   Mix the flour, sugar, baking powder and a pinch of salt in a bowl.

   Add the eggs and lemon zest and knead into a soft but workable dough.

   Fold in the toasted hazelnuts, whole or roughly chopped.

   Shape the dough into logs, place on a baking tray and brush with the yolk.

   Bake at 180°C for 20 minutes, then take out and cut the logs diagonally with a sharp knife.

   Return the slices to the oven for another 10–12 minutes, until golden and crisp.
